It depends on how it is cooked. The way my mother made it, it was soft textured for meat. Kind of like the texture of bologna, except without the nasty bologna taste. (Sorry Oscar Myers). When I had it at Bens, it was pickled tongue. It was still soft like any other meat that's been cooked through but it was sliced thin and in a sweet and sour sauce.
Wow, interesting. I thought it would be tough for some reason.
 
Now you just need some pickles and cole slaw!
Speaking of pickles, does anyone eat fermented pickles? They are 1,000 times better than vinegar-based pickles in my opinion. They are pickled in a salt brine rather than vinegar, so they don't have that vinegar taste, and since they're fermented, you get some good probiotics as well.

We had a place where I moved from called 54th Street Grill... I love their pastrami and roast beef!
