The Oktoberfest Burger seems a little involved but it is well worth it.
Pretzel roll.
Sweat down the onions with sea salt and a big thing of garlic. At the last minute scoop a big thing of mustard on to it. You don't want the sugars in the mustard to caramelize. So you have to pay attention and you have to keep stirring.
Make the burger.
Then put a nice slice smoked ham in there. Hopefully next to the onion/ mustard.
Now finding the cheese just has been a complete Bugaboo for me. Red Robin uses a muenster cheese but I think that that's only because it sounds like it's German. We can do better.
Swiss is great, and it works well with the ham but does nothing for the burger. So I guess there is no good answer but I will go back to my experiments in the kitchen.
