I've been trying the Peter Luger Steakhouse in NYC recipe from Bon Appetit magazine for many years.
Sear the heck out a T-bone in a cast-iron grill pan. Salt & pepper.
Then finish it off in the oven. But one minute before you're done pull it out and slice it. Drizzle garlic and chive butter all over it.
Back in the oven for the last minute.
Wow!
Years later I started pickling red onions to pair with that.
Otherwise my go-to is A-1 or a little bit of Worcestershire.

Skirt steak always needs to be marinated in Yuri Yuri teriyaki sauce. (TBob loves it to !)
 
Here is another fun one that doesn't require much work. I add mushrooms into the thing. Serve whole.
