I'm also reading that salt or fat can tone that bitterness down.

Rue and spices can easily do a mild burn and cause an off flavor profile.

Down here in the south, I know that could be anywhere though, I know if you over salt something, you can cut a potato in half and put it in there, and the potatoes will soak a lot of that salt back up

Hey can't please everyone. I get it, as a cook ppl just didn't like certain foods. Not the cook, the person wants what they want ;)

I could easily live as a vegetarian with milk products added into the mix. My boys actually call me an "almost vegetarian". Although I will eat fish.
