Two Summer Salad Recipes

CREAMY COLESLAW

1/2 cup sour cream
1/4 cup mayonnaise
1 T honey or sugar
2 tsp lemon juice
2 tsp Dijon or horseradish mustard
1/2 tsp celery seed
1/4 tsp pepper
1 small carrot, shredded (1/2 cup)
1/2 head cabbage, finely shredded

Mix first 7 ingredients together in a large bowl. Add cabbage and carrots, toss until evenly coated. Refrigerate for at least an hour before serving.
 
CARROT RAISIN SALAD

3 cups raw, grated carrots
1 cup seedless raisins
1 T honey
6 T mayonnaise
1/4 cup milk or cream
1 T lemon juice
1/4 tsp salt
1/4 tsp nutmeg

Toss carrots with raisins. Blend remaining ingredients and stir into carrot mixture. Chill at least 30 minutes before serving.

That would be an interesting addition! I may try that myself.
My hubby will not eat Rasins so I use cherries in recipes that require them. They pretty much taste the same in my opinion, but he will accept them. lol. They are a little bigger and less dry too.
