For those who like cornbread made with just cornmeal and no flour, here is a favorite recipe.
2 cups coarse yellow cornmeal
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 egg beaten
4 Tbs butter melted and cooled
1 and 1/2 cups Greek yogurt, or sour cream, or buttermilk
4 Tbs honey
Preheat oven to 400 degrees F. Grease an 8 inch square pan or medium size cast iron skillet. In a large bowl, whisk together the dry ingredients. In a second bowl, mix the wet ingredients. Make a well in the dry mixture and pour in the wet ingredients. Whisk until just combined.
Pour in prepared pan and bake for 20 - 30 minutes until lightly browned on top. Serve with chili, stews, or for breakfast. Enjoy!
