I just have one of the basic round charcoal grills and do the usual hamburgers, hot dogs, steaks, pork chops, ect. I also like to grill chicken, I get the whole chickens from the supermarket and cut them up into the 8 pieces myself. Chicken is fun because of the uneven, irregular shapes. I lay out the charcoal in a way that creates hot zones that I can position the meat around. By using this method of direct heat and indirect heat I can cook the chicken pieces evenly.

When I'm feeling more adventurous I use a similar charcoal method to turn the grill into a smoker. I arrange the charcoal carefully around one side of the grill, interspersed with chunks of mesquite, creating a line of charcoal rather than a pile. I then use my chimney starter to dump a small pile of red hot charcoal at the start of the line. As the charcoal burns it ignites the next few pieces in line. By having the charcoal lined up halfway to three-quarters of the way around the grill it'll keep burning for a good 14-16 hours. Then on the non charcoal side I place a brisket that's been seasoned with salt, pepper, garlic powder and deli style mustard (the kind with mustard seeds in it). The finally the lid goes on top so that the vent holes are on the opposite side of the coals. This creates smoke that has to make it's way around the whole grill and over the meat to find it's way out. Every few hours I rotate the lid to try and keep the vents at the furthest point from the burning section of charcoal. About halfway through I'll open it up and rotate the grill to keep the meat away from the direct heat as well. I usually light the charcoal at about 3:00 in the morning and by about 5:00-6:00 that evening we have a delicious smoked brisket.

I don't do this too often, only about once or twice a year, as it takes a bit of work and preparation. But the results are worth it.

it’s walleye season here. They are a delicious fish when cooked fresh especially. I used to love fishing. I haven’t done it since before I was married. Life does get away from us. Hope they are biting.
