Recipe Challenge!

I’m making this apple galette in the morning. I made an even simpler version maybe ten years ago but that one had a carmel sauce topping/glaze. I wanted something more subtle this time.

 
This morning’s breakfast - apple galette.

EASY and DELICIOUS
Cream Cheese Chicken Chili

Put 2 chicken breasts in crock pot first
Add 1 can black beans drained and rinsed
1 can corn, undrained
1 10-oz. can Rotel tomatoes w/green Chilis, undrained
1 package ranch dressing mix
1 tsp. cumin
1 Tbsp. chili powder
1 tsp. onion powder
1/2 cup water
Mix it up
On top add 1 8-oz package light cream cheese
Cook on low for 6-8 hours then stir and shred chicken!

My crockpot is full of the above yummy goodness! Can’t wait for dinner time!

I got this recipe from a dear friend. Her version was gluten free, but I made a few tweaks.

Apple Crisp

Apple Crisp
8 small - medium apples (peeled, cored and chopped) yield about 6 cups
1 dash lemon juice
1/3 cup sugar
1 T cornstarch
½ heaping tsp cinnamon
1 pinch salt

Topping
1/3 heaping cup packed light brown sugar
¼ cup flour
½ cup old fashioned oats
¼ cup almond meal
¼ tsp cinnamon
1 pinch salt
1/3 cup butter
Instructions
Preheat oven to 375 degrees F and lightly grease a 9x9 baking dish
Add apples to a large bowl or plastic bag and sprinkle with lemon juice. Toss to coat with granulated sugar, cornstarch, cinnamon and salt.
Transfer to baking dish and set aside. Rinse and dry bowl and and brown sugar, flour meal, oats, cinnamon, and salt. Stir. Add melted butter and mix until is resembles wet sand. Sprinkle topping over apples and bake until apples are soft and topping is golden brown (between 45 minutes to an hour)

Let rest 10-15 minutes before serving It's great with ice cream or whipped cream.

Let me say first YUMMY with extra “YUM-”! I made the mistake of searching out similar recipes. I found at least one that included a cup of cooked bacon and added that in. Minor mistake as the bacon overpowers most other ingredients. Next time I will follow the recipe above instead. Then offer bacon, green onions, or cilantro as an optional topping. I will definitely make this again.

My grandpa made Baked Apples. Seasoned with cinnamon & brown sugar and Brandy.

And a big thing of Kentucky Fried Chicken.

I'm going to ask my mom how he went about baking apples.
