Hot weather makes me not want to cook - eat, yes - cook, no. Ideas?

Duke will probably flail me for my spiral towards heresy but I’m into easy when it’s hot. So I’ll do a combination of...

1. One half of a can (or 1/2 frozen tray) of Skyline Chili.
2. Bag of Barilla’s 60 second micro-zap pasta.
3. 6 ozs or more of shredded cheddar cheese.

It is like a heavily processed ethereal trip to Cincinnati.
 
Crockpot Ranch Chicken.

Cut up red potatoes. Sprinkle half a packet of ranch dressing mix over it. Drizzle with half stick melted butter. Brown chicken thighs. Add to crockpot. Salt, pepper, sprinkle with other half pack of dressing mix. Low for 6 to eight hours. Serve.
 
Crockpot gravy steak.

1 large can mushroom soup. 1 small can beef broth. One packet onion soup mix. Mix. Add lightly browned with flour chuck steak or any beef of your choice. Cook on low 6 to 8 hours or on high 4 hours. Serve with a side of mashed potatoes or buttered noodles. (Bob Evans premade mashed are a go to for me. Microwave.)
 
Chicken and noodles. (Can also do beef and noodles this way.)

In crockpot, use chicken broth and chicken breasts. I use a large "box" of chicken broth. Cook for 4 to six hours until you can shred the chicken in the crockpot. Add your noodles directly to the pot. Thicken with a flour or cornstarch "slushy" mix. Salt, pepper to taste. I also like to use the frozen noodles for this. Very hearty meal.
 
Frito Mexican Casserole in crockpot.

Cook one pound hamburger with taco mix. Combine in a large bowl with one can each cream of mushroom soup, cream of chicken soup, one can drained and rinsed black beans. Add 3/4 cup shredded cheddar. Mix together.

Add in layers...Fritos and this mixture. Then top with another layer of cheese. Cook on high 1 hour until you see it bubble. Serve with sour cream.
 
Lynne we call those Pigs in a Blanket!! We had those Saturday. We love them and usually call and tell my Grandbaby and tell her and she migrates across the yard and eats at our house.

We also do a lot of cold salads like tunafish salad, chicken salad, all sorts of pasta salads, things like Waldorf salad Pimento Cheese. We also do snack meals like cereal, cheese and summer sausage on crackers, chips and dips. I like sandwiches of all kinds. We turn all the meat-based salads and the Pimentos and cheese into sandwitchesor put it one crackers. Anything that we can cook in the crockpot is a winner because we put the pot out on the porch so it doesn't heat up the house. the same goes for anything that I can cook outside on the grill.

My wife is suffering right now because of my surgery I am eating mostly things that are sort of soupy and easy on my system. Tonight we had stroganoff with the meat cut up real small. She was burning up in there. We also normally eat a lot of raw vegitables with assorted dips and a lot of fancy salads. Right now I can't handle those. I do a lot of the cooking this time of year on the grill but not right now. I would KILL for a big porterhouse steak right now!! I'm even dreaming about that. I can eat oven cooked BBQ ribs but they heat up the house.
