Hot weather makes me not want to cook - eat, yes - cook, no. Ideas?

GS - Is this a pretty typical tuna salad like mayo, routine spices, and celery? Or, is your tuna salad more exotic even before the dried cherries are added?
This tuna salad is made with just mayo, a bit of diced celery and chopped dried cherries. Sometimes a dash of curry powder makes it more exotic.

Another thing to try is draining the tuna and sauteeing it in a bit of oil until it is slightly darker, stirring in curry powder, salt and pepper to taste, then adding a peeled and chopped apple, a half cup of yogurt, a quarter cup of mayo, hamburger relish and red pepper if you like it more spicey. It's great on pita bread!

My favorite really hot weather meals are paella. It freezes beautifully. Plus the saltiness and the acid from the stuffed green olives, really goes down nice.
Defrosted a big thing of it yesterday and will eat it for the next three days.

A take and bake pizza from the grocery store is also nice. Then I goose it up with extra vegetables , cheese and garlic herb butter. Paired with a big thing of ice cold whole milk.

I now buy the cheapest cheese and tomato pizza - but on a good base, then add my own steamed peppers, onions, BBQ chicken and more cheese.
But now I've got in the habit of buying the right flour and making it all myself. You just have to plan ahead and make the dough in the morning.

There is always BBQ outside.
Chicken breast cooked with onions and tarragon goes well with anything - new potatoes, cold potato salad, any salad, potato wedges.
Chicken on kebabs with peppers and onions also work well on a BBQ with a salad.- Only we don't have a BBQ anymore after my son set fire to it yesterday.:mad: I didn't know that was even possible.
 
My brother just grilled a skirt steak marinated in teriyaki sauce.
Unfortunately he has to watch for grease flare-ups that can be seen from outer space.

I'd go grill some corn on the cob and various vegetables.
