It will be more like brunch as my family has taken to sleeping in now that school is over. Although it's possible that the smell alone will wake them up once I get things going in the morning.

Yesterday I made a big thing of a variation on chicken and rice and veg.
Grill 10 chicken thighs heavily seasoned with herbs.
In a high wall pan, sautee 4 cans of diced tomatoes, 2 rough chopped onions, 2 rough chop green peppers. 4 minced garlic cloves, and a ton of oregano.
Make a big thing of white rice in the rice cooker.
Then make an ingredient sandwich in a 2 gallon container. Rice on bottom, chicken in the middle, and pour the sauteed veg over the top. The flavors will marry together.:)
 
We are making bacon-wrapped cream cheese stuffed Japalinos for the party tonight.

This coming week we are going to give making homemade from scratch pork eggrolls.

It is funny how each nation has their own versions of the same idea. Eggrolls, manicotti, burritos, enchiladas, and tamales are all the same general idea of wrapping something in a made from grain wrapper and cook it. I remember when I was first introduced to manicotti. it was described to me as an Italian enchilada. I had eaten a lot more Mexican food than I had Italian food other than spaghetti.

I’m going to make - for the first time in 17 years - my SIL’s tuna, vegetable, and noodle salad.

I mentions this favorite food item when I visited with my Brother and SIL at the end of February. My SIL said that she had not made it in nearly 17 years too.

So this weekend, we are both making that same forgotten favorite food. Two families separated my 3,000 miles are united today by one cheap a@# recipe!

Ya know Debi, we could try this someday on the PNF. Could be like “Quarterly Recipe Day” - our combined cooking witchcraft could force the stars to align!
